This unfiltered pure rice ginjo sake is made from "Kame no O" rice grown by Mr. Kurosawa, who has long been committed to completely pesticide-free cultivation in Wakuya Town, Miyagi Prefecture, and is the first rice producer in Miyagi Prefecture to be GLOBALG.AP certified. The rice is polished to 50% and brewed with the rice.
It has a good balance of umami, sweetness, and acidity, and a full-bodied taste that really captures the potential of the rice. In general, the sake from this brewery shines with a different personality when aged.
