This is a raw sake made from Yamahai Junmai rice brewed from organically grown "Seo rice" at Seo Farm in Tottori Prefecture, which is polished to 70% and bottled unfiltered and without adding water.
Although the sake is dry, it has a strong rice flavor and sweetness, a good balance of acidity, and a rich, clean taste.

Located in Kotohira-cho, Kagawa Prefecture, this brewery was founded in 1885. It is also famous for being the place where Takasugi Shinsaku and Katsura Kogoro are said to have hid during the end of the Edo period.
