This product is part of the "Takacho" brand, developed by Aburanaga Sake Brewery, which also develops the "Kaze no Mori" brand, in order to continue traditional sake brewing.It is a pure rice sake brewed using bodaimoto yeast, and is released only once a year.
Bodaimoto brewing is a brewing method that was created at Shoryakuji Temple on Mount Bodai in Nara during the Muromachi period (1400s), and is characterized by the use of raw rice in the production process.
The sake is brewed using rice and water from Shoryakuji Temple and its land, and the starter yeast is made using Shoryakuji lactic acid bacteria and Shoryakuji yeast isolated from the temple grounds, and then modern brewing methods are incorporated into the brewing process.
This is a pure rice sake with a distinctive, rich flavor that has the regional characteristics of Nara Prefecture.
