兵庫県東条産特A地区「山田錦」を50%精米し醸した純米吟醸・原酒です。近年多くなってきた甘みと酸味を特徴とする酒質と異なり、米本来の旨味と酵母由来の酸との調和を目指しています。発酵中の醪（もろみ）に高純度の酵母培養液を添加することで、協会9号酵母でありながら通常より1.0度以上酸度の高い酒となっています。義侠らしさを守りつつ酸のニュアンスを取り入れた挑戦的なお酒です。

Located in Aisai City, Aichi Prefecture, this brewery was founded in the mid-Edo period. They aim to brew delicious sake by maximizing the power of the finest sake rice, such as Yamada Nishiki rice grown in Tojo Town, Kato City, Hyogo Prefecture, which is designated as a Special A area, and Gohyakumangoku rice grown in Nanto, Toyama Prefecture.
