This Junmai Daiginjo is made from Yamada Nishikitoku steamed rice from Hyogo Prefecture, polished to 40%. The middle part of the rice that comes out without pressure during the transfer process is collected in a tobin (small vessel) and pasteurized. It is then aged in a refrigerator for over three years before being blended. You can enjoy the taste of both the rice and the aged flavor at the same time.
