This sake is brewed from rare specially cultivated rice grown with reduced use of pesticides by the Yamada Nishiki Kyosei-kai, which is committed to cultivating high-quality Yamada Nishiki rice.

As you'd expect from Gikyo, you can fully enjoy the umami and sweetness of the rice, and the flavor only increases with age. It's a sake of a quality that seems perfectly capable of aging for over 10 years.
