This unfiltered pure rice sake is made using Omachi rice, the oldest and most established rice variety in the Akaiwa region of Okayama Prefecture. It brings out the best in Omachi, boasting a refined, robust rice flavor and a crisp finish. Enjoy the youthful, fresh, and clear taste of unfiltered sake, a limited-edition sake available at this time of year. A cloudy version will also be released at the same time.
It's also fun to compare it with the "Yamada Nishiki" version, which is made with a different type of rice.

Producer/Brewery ( Shizuoka Prefecture / Doi Brewery (Good Luck) )

This brewery was founded in 1872 in Kakegawa City, Shizuoka Prefecture. Led by the master brewer Masayoshi Hase, who was hailed as one of the four great master brewers of Noto, the brewery has been highly praised for its early involvement in ginjo sake, with initiatives such as reviewing everything from the selection of sake rice to sake brewing equipment and production methods.
