山田錦の生みの親である「山田勢三郎」翁。その系譜を継ぐ「山田正壽（やまだまさとし）」氏が兵庫県で作る「山田錦」を60%精米し醸した純米吟醸の生酒です。通称「山田さんの山田錦」。

山田氏の山田錦で醸すとハリが良く、旨味が綺麗に出て輪郭のしっかりとした味わいになるそう。口に含むと涼やかで軽く、柔らかな口当たり。艶と透明感がありミドルボディな旨味と酸の調和しながら切れていきます。

Producer/Brewery ( Gifu Prefecture / Nakajima Brewery (Kozaemon) )

This brewery is located in Mizunami City, Gifu Prefecture, and was founded in 1702. Its flagship brand, "Kozaemon," named after the founder, has been on the market since 2000.

In 2002, the company began contracting rice cultivation in its local Mizunami area, and since 2004 has been working with all of its brewers as employees, promoting sake brewing rooted in the local community.
