山形県産「出羽燦燦」100%使用、62%精米し「つつじの花酵母」で醸した純米の、ひと夏熟成させたひやおろし（1回火入れ）です。落ち着いた熟成香にマイルドな酸があり、米の旨みが穏やかに感じられます。常温～ぬる燗くらいまで温めるとコクのある酸が立ち、ひと夏越したひやおろしならではの旨味が広がります。

Producer/Brewery ( Ibaraki Prefecture/Rifuku Brewery )

This brewery, located in Chikusei City, Ibaraki Prefecture, was founded in 1716. Since 2006, they have switched from brewing sake by Echigo Toji to brewery Toji. They are also focusing on sake made using various flower yeasts that Tokyo University of Agriculture has successfully isolated from natural flowers.
