The concept is "Edo-going back, embracing the future as seen from Edo, and a never-ending return to everyday life." This is a raw sake made using Yamada Nishiki rice from Sakura City, Tochigi Prefecture, using the kimoto method. This "Modern Ichishiki" is the pasteurized version of the four types that will be released sequentially using the same method. (Zeroshiki = unpasteurized sake, Ichishiki = pasteurized sake, Nishiki = origarami sake, Sanshiki = sparkling sake)
