While sake generally uses yellow koji, this "Sensuke Special Junmai White Koji Unfiltered Raw Sake" uses white koji in part, which produces acidity (mainly citric acid) that gives it a moderate sweetness on the palate and a refreshing, sweet-and-sour taste due to the acidity unique to citric acid. This product is an active cloudy version, created by straining the "Sensuke" mash through a coarse filter and bottling it while it still contains a lot of cloudy white sediment, allowing fermentation to continue in the bottle, resulting in a high carbon dioxide content and a fizzy, effervescent taste.
