毎年11月に発売される、当蔵の人気商品「生生熟成5055」。麹米に兵庫県産「山田錦」（50%精米）、掛米に広島県産「八反錦」（55%精米）を使用し醸した純米吟醸の、無濾過・生原酒です。３月に上槽・澱引き後、冷蔵タンクの中で約7か月熟成させ、その後に瓶へ直詰めし、更に１か月ほど蔵で酒質を落ち着かせてから出荷されます。
新酒のフレッシュ感も感じつつ、品格のある円熟味を増したバランスの良い味わいです。この蔵の特徴で、生原酒ですがお燗することもまた異なる個性を楽しめ、お勧め。さらに熟成させることも一興です。

Producer/Brewery ( Aichi Prefecture/Chochin Sake Brewery )

This brewery was founded in the late Edo period in Tsushima City, Aichi Prefecture. The name "Chochin" was chosen by the previous generation with the aim of brewing a rare yet delicious sake that would be loved for a long time and highly valued throughout the ages. The popular product is the limited edition "Newspaper Series," which is wrapped in newspaper to protect sake from light, which is the enemy of sake.
