It has a clear taste, like an even cleaner Yamadanishiki, and is easy to drink. You can enjoy the youthful freshness and clarity that comes with being unfiltered.

Producer/Brewery ( Shizuoka Prefecture / Doi Brewery (Good Luck) )

This brewery was founded in 1872 in Kakegawa City, Shizuoka Prefecture. Led by the master brewer Masayoshi Hase, who was hailed as one of the four great master brewers of Noto, the brewery has been highly praised for its early involvement in ginjo sake, with initiatives such as reviewing everything from the selection of sake rice to sake brewing equipment and production methods.
