「山田穂」（やまだぼ）は、明治・大正時代に兵庫県で栽培されていた酒米で、酒米の王・山田錦の母親として知られています。近年、栽培が再開されましたがその収穫量はまだまだ少ないため、毎年タンク１本 のみの醸造となっています。
山田錦のお酒を彷彿とさせる、にごりならではの、柔らかでふくらみのある味わい、濁りのないキレの良さが魅力です。無濾過らしい若々しいフレッシュ感が楽しめます。

Producer/Brewery ( Shizuoka Prefecture / Doi Brewery (Good Luck) )

This brewery was founded in 1872 in Kakegawa City, Shizuoka Prefecture. Led by the master brewer Masayoshi Hase, who was hailed as one of the four great master brewers of Noto, the brewery has been highly praised for its early involvement in ginjo sake, with initiatives such as reviewing everything from the selection of sake rice to sake brewing equipment and production methods.
