麹米に、「瀬戸内かきがらアグリ事業」で田んぼに牡蛎がら資材を土壌改良材に使用し育てた良質なお米である里海米として栽培した「雄町」（19%）を50%精米し、また掛米に同様に里海米である「アケボノ」（81%）を58%精米し、醸した純米吟醸の、贅沢に「中取り」部分のみを瓶詰めした、無濾過生原酒です。
香澄（かすみ）という名前の通り、ふわりと立ちのぼる完熟パイナップルを想わせる上品な香り、やさしく澄んだまろやかな口当たり、静かに消える余韻が楽しめる味わいです。

Producer/Brewery ( Okayama Prefecture / Kami Kokoro Brewery (Kami Kokoro) )

This brewery, located in Asakuchi City, Okayama Prefecture, was founded in 1913. They use the latest rice washing machines to thoroughly remove the bran from rice grown in Okayama Prefecture, then carefully soak it and carefully make koji. They also use a thorough air conditioning management system and air purifiers to maintain the temperature inside the brewery at around 5°C during brewing, creating an environment that promotes stable fermentation.
