This matured sake is a blend of 16 types of sake aged up to 5BY (brewing year 5 of Reiwa 2), including a regular sake made with locally grown Hida Homare rice (brewed in 2015, aged in tanks for 9 years), a junmai sake made with Yamadanishiki and Omachi rice, a kijoshu made with Hida Homare and locally grown rice, and a honjozo sake.
It has a deep, matured aroma, mellow sweetness and umami, and a well-balanced acidity, making it easy to drink. It's also a good introduction to aged sake.

Producer/Brewery ( Gifu Prefecture / Nakajima Brewery (Kozaemon) )

This brewery is located in Mizunami City, Gifu Prefecture, and was founded in 1702. Its flagship brand, "Kozaemon," named after the founder, has been on the market since 2000.

In 2002, the company began contracting rice cultivation in its local Mizunami area, and since 2004 has been working with all of its brewers as employees, promoting sake brewing rooted in the local community.
