This popular lightly cloudy pink sake is made using red yeast (adenine-requiring yeast). The beautiful pink color is striking. This is a pure rice ginjo made from Gohyakumangoku rice grown in Niigata Prefecture, and is unfiltered.
It has a sour taste reminiscent of yogurt or pink grapefruit, and a sweetness that you wouldn't expect from sake. It has a slight fussiness and a light, sweet and sour taste. Because it has a low alcohol content, it's delicious as an aperitif or after a meal with fruit or desserts. You can also enjoy it warm, at body temperature.
