Since Yamada Nishiki is a late-season rice variety, Gohyakumangoku rice is the main focus in October and early November. It has a cleaner, sharper flavor than Yamada Nishiki. It has a distinctive citrus acidity reminiscent of grapefruit. Enjoy it with white fish.
