This Junmai Daiginjo sake is made from rare Yamada Nishiki rice grown in Tojo, Hyogo Prefecture's Special A District, polished to 40% and brewed with Kochi yeast AC-95, which is known for its high production of the two main components of ginjo aroma: apple-like aroma (ethyl caproate) and banana-like aroma (isoamyl acetate).
The two types of ginjo aroma, apple and banana, blend together to create a new, lustrous fruity aroma never before seen before. The high-quality mouthfeel further enhances the ginjo aroma, creating a special taste.
