This Junmai Ginjo is made from "Gin no Yume" (Test No. Ikushu No. 54), the first rice suitable for sake brewing cultivated in Kochi Prefecture. It was bred at the Kochi Prefectural Agricultural Technology Center and brewed by our brewery. It is polished to 50% and brewed with our own yeast.

It has a subtle ginjo aroma, a rich umami flavor that brings out the best in the ingredients, and a refreshing citrus acidity that makes it easy to drink.
