This Junmai Ginjo is made from Hokkaido-grown "Ginpu" rice, polished to 50%. The first bottle of Ginjo sake is bottled as a freshly pressed unpasteurized sake. After pressing, it is aged at low temperatures in a refrigerated tank for 10 to 14 days to refine the flavor.
It has the freshness and strength that only unpasteurized sake can offer, and its acidity is slightly higher than that of regular Ginrei.
