This is Akishika Brewery's flagship product. Yamadanishiki rice from their own fields is polished to 40% and brewed at low temperatures. The mash is then hung in a sake bag, and only the middle part of the drippings is collected and stored in a tobin, resulting in a rare Junmai Daiginjo that can only be obtained in very small quantities.
