This is a pasteurized version of Junmai Daiginjo sake made with Yamada Nishiki rice from Hyogo Prefecture, polished to 40% and brewed with Kochi yeast CEL-24, which produces a gorgeous aroma. Limited edition brew.
The rich pineapple-like aroma and sweet and sour taste that are unique to CEL-24 are expressed in a more refined form, resulting in an elegant and clear taste.
