This is a genuine sparkling sake (pasteurized) made from Junmai Ginjo brewed with Hattan Nishiki and Kazenaruko (Takaiku No. 63), a very rare rice variety unique to Kochi Prefecture that is suitable for sake brewing, polished to 55% and then secondary fermented in the bottle.
With its mellow aroma, soft sweetness, and firm bubbles like champagne, this is the perfect drink for elegant entertaining.
