拠点がある兵庫県黒田庄地区で2025年秋に収穫された「山田錦」の個性を表現した限定酒、第二章／第三幕「Rue du Faubourg Saint-Honore（フォーブル＝サントノレ通り）」。パリのフォーブル＝サントノレ通りを思い起こさせる、九平次らしい気品を礎にしながらこれまでとは異なる酸の表情を重ね、鮮やかな華やぎを湛えています。
歴史ある街並みの中に現代の感性が自然と息づくような感覚。華やかでありながら決して過剰ではなく端正な佇まいの中に新鮮な表情が静かに表れてきます。山田錦が持つ豊かな旨味とふくらみを大切にしながら新たな酸の表現を重ねることで味わいに鮮明な輪郭と伸びやかさを与えています。

造りでは「酸」へフォーカス。当蔵では、日本酒における酸は、鋭さや未熟さとして、時に忌避される存在ではなく、五味の均衡を司る重要な要素であり、甘味を引き締め、旨味を輪郭づけ、苦味を整え、味わい全体に立体感と推進力を与えるものとして捉えています。

Producer/Brewery ( Aichi Prefecture / Banjo Jozo (brewer Kuheiji) )

This brewery was founded in 1647 and is located in Nagoya City. As their flagship brand "Kojibito Kuheiji" suggests, they cherish the bitterness, astringency, and acidity that people find unpleasant, and create natural, three-dimensional sake that is infused with and harmonizes the "diverse aromas " and "five flavors ." We place particular emphasis on the quality of the acidity, and ``beautiful, elegant acidity'' is the core of all our products.

Additionally, under the name Domaine Kuheisi, the company has been producing wine in Morey-Saint-Denis, Burgundy since 2016, and is attracting a great deal of attention for going beyond the traditional boundaries of alcoholic beverages and exploring new possibilities.
