この「協田（きょうでん）」は、現地へ移住した九平次スタッフが「赤磐雄町」米の専業農家と協（とも）に田を耕すことに因んで命名された純米大吟醸です。

香りは雄町に共通する若草などの青い香りのニュアンス、ボタニカルな香り。そして一番の特徴は、南国の果実のニュアンス。同じニュアンスでも40％まで磨いたことで香りはエレガント、かつ繊細に層を重ねたよう。口にすると柑橘の皮を少し絞ったような苦さ、そして旨味を感じ、余韻も非常に長く感じます。旨味のボリュームが繊細にコントロールされていることで味わいのバランスは非常に良く、40％まで磨いた旨味・余韻をしっかりと感じられます。これも酸味が味を下支えしているからこそ。
開栓したてのフレッシュさを楽しむのはもとより、料理と合わせるなら開栓してから少し時間が経ったものもお薦め。そして時間軸の変化だけでなく温度による味の変化を楽しむのもお薦めです。

Producer/Brewery ( Aichi Prefecture / Banjo Jozo (brewer Kuheiji) )

This brewery was founded in 1647 and is located in Nagoya City. As their flagship brand "Kojibito Kuheiji" suggests, they cherish the bitterness, astringency, and acidity that people find unpleasant, and create natural, three-dimensional sake that is infused with and harmonizes the "diverse aromas " and "five flavors ." We place particular emphasis on the quality of the acidity, and ``beautiful, elegant acidity'' is the core of all our products.

Additionally, under the name Domaine Kuheisi, the company has been producing wine in Morey-Saint-Denis, Burgundy since 2016, and is attracting a great deal of attention for going beyond the traditional boundaries of alcoholic beverages and exploring new possibilities.
