LOWBROW CRAFT/Niagara 2023 White Slightly Sparkling

This new winery opened in Yoichi, Hokkaido in October 2022. The owner, who trained at Domaine Takahiko, has begun releasing a series of exciting new products using grapes grown on his own vineyard. This wine uses wild yeast, and does not use cultured yeast, enzymes, fining agents, or sulfites. Instead, it adds only the sugar necessary for sparkling wine, undergoing secondary fermentation in the bottle (there may be some sediment, but this does not affect the quality).
This natural wine is low in alcohol, has the gorgeous aroma of the Niagara variety, a refreshing citrus flavor, and is made in the image of a saison-style craft beer.
