This is the first time that Okuharima has used Kanazawa yeast. This Junmai Daiginjo sake is made using Hyogo Prefecture's Yumenishiki rice, polished to 50% and brewed using the Yamahai method. Only the finest part that naturally drips from the mash bag (Fukurotiri Shizukuzake) is bottled and pasteurized to create a luxurious sake.
It has a clear, clean taste with a gentle ginjo aroma.
Recommended for dishes with elegant flavors, such as white fish sashimi and oyster dishes.
