This sake will be released from Okuharima towards the end of summer. It is a Junmai Ginjo (pasteurized) brewed with 55% polished rice, using Yamada Nishiki rice from Hyogo Prefecture as the koji rice and Hyogo Yumenishiki rice from Yasutomi Town, Hyogo Prefecture as the rice used for the brewing.
The rounded acidity and gentle sweetness derived from the rice add color to seasonal dishes in late summer.
