This small-batch product was named after the island of Koshikishima, where the brewery is located, which is also known as "Koshiki Province." Fresh sweet potatoes (Kogane Senkan) from Kagoshima Prefecture are used, along with white koji (White Koji Gold Excellent L-type), and a shochu yeast that is an improved version of sake yeast. The resulting sweet potato shochu is easy to drink while still retaining the umami flavor of the potato, thanks to the aging process in earthenware pots and filtering through a silk sieve.

This shochu brewery was founded in 1908 and is located on Shimokoshikijima Island in Satsumasendai City, Kagoshima Prefecture. The product name "Soshu" comes from the fact that the island where the brewery is located is also called "Soshu."
