This dry Junmai sake is made from new sake brewed in winter, pasteurized in early spring, aged over the summer, and shipped in autumn as "nama-bottled" sake without a second pasteurization. This dry Junmai sake, even among Tamagawa's varieties, gradually develops in flavor, softening the acidity and astringency like ripening fruit, and developing a richer umami flavor. It is especially recommended to drink it chilled or warmed.

This brewery was founded in 1842 in Kyotango City, Kyoto Prefecture. They focus on the changes in taste over time and at different temperatures, and create sake that can be enjoyed at a variety of temperatures, from on the rocks, chilled, or at room temperature, to extremely hot sake and cold sake. They also place importance on robust sake, meaning sake that can be enjoyed for aging and that does not spoil easily.
