This Junmai Daiginjo is made from Yamadanishiki rice grown in Tokushima Prefecture, polished to 50%. After pressing, it is stored at a low temperature of 0-3°C for one year, and then rapidly cooled (pasteurized). The gentle, wide-ranging flavor is brought together by Tenmei's distinctive acidity, resulting in a beautifully finished sake that is typical of Junmai Daiginjo.
