The contents have been renewed for the 2024 brewing year. This is a Junmai Ginjo unpasteurized sake made from 50% polished Miyamanishiki rice and brewed with a blend of three types of yeast (Kyokai No. 901, Utsukushima Yume Yeast F701, and malic acid-producing yeast). This is an autumn-aged Junmai Ginjo (a honnama sake that has never been pasteurized) with the theme of "maturity" in keeping with the autumn season.
The new sake pressed in spring is stored and aged in a temperature-controlled tank in its raw state without pasteurization, allowing you to enjoy the rich flavor that comes with aging.
