2016BYでは酒米に「八反錦」を使いましたが、2017BYでは「山田錦」を使用（山田錦＝"山"、協会８号酵母＝"八"、精米80%＝"八"）、通称「山八八」で呼ばれる純米の、無濾過生原酒。蔵内8年熟成の後、出荷されています。

酸が多く生成され濃醇な味わいが特徴の、近年では見かけなくなった「8号酵母」により醸したこともあり、辛口タイプながら、どっしりした力強く、濃醇な味わい。それを長期熟成ならではの無二のまろやかさが包み込んでいます。

Located in Nose Town, Toyono District, Osaka Prefecture, this sake brewery was founded in 1886. It is one of Osaka's leading breweries. By challenging themselves to cultivate Yamadanishiki rice without pesticides, they secure high-quality sake rice and use it to make sake.
