"Aizan," a multiple cross between "Omachi," is a rare sake rice with low production volume and requires a lot of effort in brewing management. On the other hand, it has excellent water absorption and is very soluble, resulting in a well-balanced taste with a rich rice sweetness and a unique, moderate bitterness.
Aizan, a once-pasteurized raw sake, will be released in the fall and has a very clear taste, with a beautiful ginjo aroma and a refined sweetness that blends together and gently expands in the mouth.
