The "Mansaku no Hana Toji Senbatsu" series is a popular series in which the Toji personally selects freshly pressed sake and bottles it under his supervision, releasing it with a handwritten label.
This sake is a Junmai Ginjo made with Miyamanishiki rice polished to 55% and pasteurized once. Fermented over a long period at low temperatures, similar to Junmai Daiginjo, it is both easy to drink and satisfying, making it a great value for the money.
This ginjo sake has a well-balanced acidity and umami, a subtle aroma, and a delicate yet powerful flavor. It pairs extremely well with food, and is a sake you will never tire of drinking.
