The regular Junmai Shochu "Amakusa" is made using local rice (Koshihikari rice is used for the koji rice) and pure brewing water, and is slowly fermented at extremely low temperatures in earthenware jars. The mash is carefully distilled, and is delicious enough to drink as sake on its own. The subtle ginjo aroma pairs well with food.

In contrast, this "Tokuchu Amakusa" uses Nishikai 134 (commonly known as "The Earth's Radiance"), a type of rice suitable for sake brewing, for the koji rice. It was named "Tokuchu Amakusa" with the meaning of "special shochu." It has a stronger, fuller flavor.
