"Ikenotsyu Yushima" is a premium series made with rare Yushima sweet potatoes, which are produced in small quantities in Yushima, located roughly halfway between the Amakusa Islands and the Shimabara Peninsula. This product is made with the sweet potatoes and a new fission yeast called "Highest Yeast," developed in collaboration with Kumamoto University, allowing for a special ginjo aroma.

Producer/Brewery ( Kumamoto Prefecture / Amakusa Sake Brewery (Ikeno Tsuyu) )

This shochu brewery was founded in 1899 in Amakusa City, Kumamoto Prefecture. While it is said that there are not many breweries that make shochu by hand, starting from koji, they are committed to making everything by hand, including koji making, and they also produce the rice and potatoes that are used as ingredients in-house, demonstrating a strong commitment to "handmade x agriculture."
