This shochu brewery was founded in 1899 in Amakusa City, Kumamoto Prefecture. While it is said that there are not many breweries that make shochu by hand, starting from koji, they are committed to making everything by hand, including koji making, and they also produce the rice and potatoes that are used as ingredients in-house, demonstrating a strong commitment to "handmade x agriculture."
