This shochu is brewed to have a powerful, full-bodied flavor, and is stored in a jar for a long period of time, with the assumption that it will be aged for at least five years. The tiny pores on the surface of the jar allow air to enter, accelerating the aging process and giving the shochu a mellow taste. It has a round, soft flavor that is often described as "milky."

Producer/Brewery ( Kumamoto Prefecture / Amakusa Sake Brewery (Ikeno Tsuyu) )

This shochu brewery was founded in 1899 in Amakusa City, Kumamoto Prefecture. While it is said that there are not many breweries that make shochu by hand, starting from koji, they are committed to making everything by hand, including koji making, and they also produce the rice and potatoes that are used as ingredients in-house, demonstrating a strong commitment to "handmade x agriculture."
