Time Machine is made using Edo-period methods and is super sweet, but thanks to the magic of having three times the acidity and five to seven times the amino acids of ginjo sake, it has a rich sweetness that is refreshing and leaves no lingering residue, making it the perfect aperitif and the equivalent of a Japanese sake dessert wine.
It's so delicious when poured over ice cream that it's almost laughable, but it also pairs surprisingly well with blue cheese, foie gras, and even Tango's specialty, mackerel pickled in rice bran, "Heshiko."

The label of "Time Machine 1712" depicts a sake brewery from the Edo period, and features a robot with the Tamagawa logo on its face blending in as a brewer.
