This low-alcohol (11.5%), single-pasteurized Junmai sake was brewed with the concept of "allowing sake to be enjoyed lightly and smoothly even in the hot season." It is a blend of six mashes, each made with three types of yeast (Utsukushima Yume Yeast F701, Kyokai No. 1001, and Shin Utsukushima Kira Yeast), two types of yeast starter (sokujomoto and kimoto), and four stages of white koji fermentation. Its clear, beautiful sweetness, refreshing acidity, and well-balanced body give it a refined flavor despite its low alcohol content.
