Henri Giraud, the "mythical champagne" enjoyed only by the upper classes of Europe, represents the house's signature prestige champagne, the "Fu de Chêne MV (Multi-Vintage)." The year (MV17) following the "MV" on the bottle neck refers to the vintage, which accounts for approximately 70% of the total wine, while the remaining 30% is made up of reserve wine aged from 1990 onward. As the product name "Fu de Chêne" (wooden barrel) suggests, this champagne is aged for 12 months after primary fermentation in oak barrels in the Argonne Forest, followed by extended aging in bottle. The grapes used are 100% from the Grand Cru village of Aÿ. This champagne, with the characteristics of a wine that can withstand long aging, further develops in complexity with cellaring.

It pairs well with foie gras, pain d'épices, seafood casseroles, any meat dish, mature cheeses like Vieux Comté, and hard goat and sheep cheeses. To appreciate its intense and complex aromas, it is best served chilled in a generous glass. Its depth of flavor will be enjoyed by both Champagne lovers and seasoned connoisseurs of fine wine.
