Owner François Confuron began making his own wine in 1989 under a métaillage (tenant-tenancy) contract in Vosne-Romanée, and in 1997 he took over Vosne-Romanée and Nuits-Saint-Georges from his father, where he continues to this day. The estate's vineyards are largely old, some over 70 years old, and 90% of the juice is free-run, with only 10% pressed wine used to give the wine structure. Fermentation takes place in large barrels, with maceration lasting approximately three weeks. The wine is produced using lutte raisonnée (reduced pesticides), unfiltered, and unfined.
This wine is made from vines with an average age of 30 to 70 years, some of which are whole-cluster fermented, and aged for approximately 18 months in barrels (30% new). It is not filtered or clarified, but is left to settle in tanks for two months to allow the sediment to settle. It has a deep, rich red color, aromas of plum, herbs, and cherry, a moderate oak flavor, and powerful, firm tannins. François explains, "The acidity is milder than Gevrey-Chambertin. It has finesse and is very elegant."
