Collection: Okinawa Prefecture / Izena Brewery (Tokiwa)

This Ryukyu Awamori brewery in Okinawa Prefecture was founded in 1949. Everything is done by hand, and the sake is brewed using mainly Thai rice, with some island rice (domestic rice) harvested once a year.

Thai rice has little moisture and is hard, making it easy for koji mold to grow, resulting in a rich, deep-flavored sake. Compared to Thai rice, island rice has a higher moisture content and requires a lot of effort to make koji, but the distilled sake has a clean taste. After distillation, it is aged in the relaxed atmosphere of the island.
