The underground water from the Makihata mountain range, pumped up from a well dug on the premises, is of high quality and soft, making it ideal for brewing sake with a smooth mouthfeel.In addition, the brewery uses "ippon-jime" rice, a rare variety that is increasingly being used by fewer and fewer breweries due to the difficulty of polishing the rice, managing the moisture content, and making koji.The brewers themselves are involved in the entire process, from seed production to management, cultivation, and polishing, and are extremely particular about the quality of the rice.
