Collection: Shizuoka Prefecture / Omuraya Brewery (Wakatake Onnanakase)

Founded in 1832, this brewery is located in Shimada City, Shizuoka Prefecture. Its representative brands are "Wakatake" and "Onna Nakase." Originally created as a sake for Shimada-juku, located on the east bank of the Oi River, the brewery was on the brink of closure around 1970. Amidst this, they revived a sake called "Wakatake Onikoroshi," which was said to have once taken Shimada-juku by storm according to ancient documents. It gained a great reputation as a delicious, crisp, very dry sake, and subsequently released "Onna Nakase," marking a remarkable comeback.

In sake brewing, they were one of the first to introduce meticulous rice polishing machines, and all of their koji, from regular sake to daiginjo sake, are made by hand using 10kg koji boxes. They strictly control the temperature during brewing, and aim to produce a sake with a refined, subdued aroma of Shizuoka yeast and a full body with plenty of depth of flavor, perfect for pairing with food.
