Collection: Ishikawa Prefecture/Kuruma Sake Brewery

Founded in 1823, this brewery is located in Hakusan City, Ishikawa Prefecture. Its signature brand is "Tengumai," and many people will associate it with the "Yamahai" method. At Tengumai, many sakes are actually brewed using the Yamahai method (abolished Yamaoroshi yeast starter), which was developed in the 1960s by the seventh-generation head of the family, Kuruma Tashiro, and master brewer Nakasaburo, who poured their heart and soul into creating what could be called the Tengumai style of Yamahai. Even today, they continue to carry on this tradition, making improvements as they strive to produce sake that is rich in flavor and has a sharp finish.
