Collection: Aichi Prefecture / Mizutani Sake Brewery (Senpyo)

Founded at the end of the Edo period, this brewery is located in Aisai City, Aichi Prefecture. Its flagship brand is "Senpyo." A fire occurred in May 2024, causing extensive damage, but thanks to cooperation and support from Yamachu Honke Brewery and Sekiya Brewery, the brewery has now safely resumed sake brewing.

Part of the current brewery is the original building from when the brewery was founded, and the brand name "Senpyo" comes from the fact that the horse crest of Toyotomi Hideyoshi, the local hero who unified Japan during the Sengoku period, was a "Sennari Hyotan" (thousand gourds).
We take advantage of the conditions ideal for sake brewing, such as the abundant, high-quality underground water from the clear waters of the Kiso River system (Kiso, Nagara, and Ibi), the high-quality rice harvested from the Nobi Plain, and the cold winter winds known as "Ibuki Oroshi."
