Collection: Kagoshima Prefecture / Shiratsuyu Sake Brewery (Shiratsuyu, Iwaizumi)

Founded in 1730, this shochu brewery is located in Ibusuki City, Kagoshima Prefecture. Located at the southernmost tip of the Satsuma Peninsula, Ibusuki City is where sweet potatoes were first introduced to Japan in the early 17th century, and the soil is ideal for growing them. It's also an area rich in high-quality natural (soft) water that springs from the foothills of mountains such as Mt. Kaimondake. Taking advantage of this environment, the brewery primarily uses high-quality Golden Senkan rice from Kagoshima Prefecture and faithfully adheres to traditional methods, aging the shochu for about a year. During this time, only excess oils that arise due to the temperature difference with the outside air are carefully removed by hand, resulting in a deep flavor not found in cold-filtered shochu.
